Born in the Deux-Sèvres region, where it is still made on the farm, Mothais sur Feuille is wrapped in a chestnut leaf.
The role of the chestnut leaf is to regulate the cheese's ripening and moisture content, enabling it to develop all its flavors: the leaf sucks in moisture when the cheese is still fresh, and releases it when it dries.
Mothais sur feuille is so unctuous that it melts in the mouth, releasing aromas of undergrowth.
