UK cheese called the king of cheeses in England
This wonderful blue cheese is our Roquefort's most famous competitor.
Although made in parts of Leicestershire, Derbyshire and Nottinghamshire, it got its name in the 18th century because it was first sold in the small Huntingdonshire village of Stilton.
Stilton is made from whole cow's milk and matured for 4 to 6 months.
It is during this period that pencilium roqueforti is added.
This process creates a pale yellow interior with blue-green veins. The texture is rich and creamy but slightly crumbly.
