With its long-standing reputation, Selles-sur-Cher has preserved its tradition of artisanal production, earning it the AOC label in 1975, one of the first of its kind.
Its thick disk shape with beveled edges is its hallmark.
The older it ages, the more characterful Selles-sur-Cher becomes, and the more pronounced its nutty, goaty flavor.
Its very white paste contrasts with its fine, downy rind showing surface mold. At first, it's a little hard, then soft, heavy and almost clay-like, before finally melting in the mouth.
Its delicate taste is reminiscent of the gentle way of life in the Loire and Cher valleys. The fine charcoal ash that covers it gives it a slightly bluish hue.
