Sainte Maure de Touraine is the flagship of Touraine goat cheeses.
This cheese is identified by a rye straw that runs through the middle of the cheese, making it easier to remove from the mold and transport, so that it doesn't break.
For best results, remove the straw.
It gives off aromas of walnut and goat's milk. Slightly salty, its flavor depends on the stage of ripening, tending towards hazelnut as the cheese matures.
A farmhouse Sainte Maure de Touraine should have a thin, even rind, sprinkled with white/blue mold.
