Originally made from goat's milk centuries ago, Saint-Marcellin is now made exclusively from cow's milk.
A soft, creamy cheese, it gives off stable aromas with a slight hint of bitterness.
Saint Marcellin has a slightly acidic taste with hints of hazelnut.
Depending on the maturing process, it will be supple (young), unctuous (mature) and runny (very mature).
