A creamy, slightly liquid cheese speciality made from metton.
A Franche-Comté specialty spread made with cow's milk.
Cancoillotte originated in the kitchens of peasant women living near towns. They extracted fresh cream from the milk to sell the butter at local markets.
The milk is first curdled, giving rise to the precious "metton", a whitish block. After crumbling and fermentation, the metton is gently melted with salted water and butter, creating a yellow, sticky syrup, the emblem of cancoillotte.
IGP since 2022.
This version is flavored with garlic.
