Short Description:
A hard cheese from Savoie whose milk comes from a single breed of cow: Abondance.
In the 14th century, the monks of the Abbey of Sainte Marie d'Abondance, on the Swiss border, were the official suppliers of Savoyard cheeses for the Pope's election in Avignon.
It takes its name from the "Abondance" breed of cattle selected for its production.
Its smooth, amber rind bears the marks of canvas. The blue casein plaque on the rind attests to its PDO status since 1990.
It has a fine, clean flavor with a vegetal and hazelnut aroma. It offers a complex combination of slightly bitter and sweet flavors, with a lingering aftertaste. The texture of its ivory-yellow paste is supple and unctuous.
