It is made from raw milk and ladled. It bears the label "Camembert de Normandie", raw milk, ladle-moulded, 45% fat as a guarantee of quality.
A good Camembert is matured throughout, with a light yellow paste and a slightly salty taste. It has a delicate, subtle taste of lightly salted terroir. The paste is light yellow, the rind streaked with a light white down.
