1. Clean mushrooms and chop in pieces
2. Mince garlic and onions finely
3. Peel and chop the potato into small cube
4. In a pot, add butter, mushrooms, onion, garlic, salt, pepper and parsley. Cook for 5-7 minutes
5. Take a few mushrooms out to garnish the bowls later if you want
6. Add stock and potatoes to the pot
7. Put a lid on the pot and let it cook on medium-low for 15 minutes
8. Add Vacherin Mont d’or to the mushrooms and mix with a hand mixer
9. Before serving, add a tablespoon of Vacherin Mont d’or on each bowl and add a few mushrooms set aside earlier
