Palet du Maursois

This small goat's milk cheese is produced in Auvergne. It is a cousin of Rocamadour and is defended by an association of producers, small farmers, and industrialists. The origins of the cheese go back to the Arab invasion that once introduced goats in France. The Palet de Marsois presents a pale yellow rind, a fine and homogeneous texture. It has a regular shape. The cheese has a nutty smell and a delicious milky flavour. In Spring, it is fresh and has a good scent of grass and pastures, in Summer, when more matured, it is drier. In Fall, it becomes hard and brittle. Some amateurs like it toasted on a bed of salad
