Tomme Pierucci

The Pierucci is a well known milk co-operative that has rich and highly perfumed ewe’s milk. The cheese is matured for over a year and at that stage the dough is slightly chalky. Maturing takes place in caves with a temperature of 12° C and 85° humidity. This cheese is greatly appreciated by the local population.
