Saint Point

This is an artisanal cheese from Franche-Comté. It is best eaten with toasts. It can be also used for the preparation of the famous Tartiflette dish (i/o Reblochon). The rind is just formed, the fat content is almost 50% which accounts for its smoothness. Affinage takes at least 4 weeks.
