This cheese is Brie's little brother; some say that it is the grandfather.
It is smaller and thicker than Brie but otherwise possesses all the characteristics of a Brie.
Its taste is sweet and melting, with an almond flavour.
Then, we create a new cheese when we mix the Coulommiers and the black truffles.
Cut in 2 the Coulommiers, add a touch of Mascarpone, and recover the cheese with slices of black Truffles.
Then, be patient, matured the new cheese for a week to allow the flavor of the truffles to penetrate the Coulommiers.
