This little goat cheese raises proudly its Occitan cross.
The Croix Occitane cheese is produced in the south of France (near Toulouse) by a unique farmer.
The farm has a herd of 500 goats and produce its own cheeses. One of them his the Croix Occitane.
Of course it has a attractive look, but also a very nice taste. Young (2 to 4 weeks) the cheese has a goaty flavor with a little touch of acidity, older, the cheese loses its goaty flavor to developp a nutty one.
The Croix Occitane marries with dry white wine (sauvignon grape).
