Produced by a sole farmer in the Alpes de Haute Provence near the Riviera, La Tome à la Sarriette (savory) is a goat cheese similar to its cousin: le Banon. The cheese is the same: a small round goat cheese, but instead of wrapping it with a chestnut leaf, it is spread with wild basil or savory herb. This herb give the cheese a taste of garrigues vegetation and will balance the slightly acidity typical of goat cheeses.
Open a bottle of rosé de Provence, savor the Tome à la Sarriette and you might hear the song of the cicadas.
Enjoy!
