This goat cheese is produced in the center of France, in the area of Poitiers.
In fact, this cheese is the cousin of the Selles sur cher, but in a smaller version.
It has a round shape and its rind is recovered with charcol (which helps during the maturation of the cheese)
Fresh, its taste is slightly salty with some touch of acidity and when its maturation last, its taste becomes stronger end the pate could be very hard.
Thise cheese will perfectly pair with a Sauvignon grape wine such as Sancerre.
