Despite the imposing size of most Pyrenean cheeses, there are some of a size that is easier to sell and buy. The Lossaba is an artisanal cheese made with ewe's milk. It has a solid pleasantly rustic flavour and aroma, and easily holds its own against the bigger cheeses.
White wine: Pacherenc du Vic Bilh (Arrufiat, Manseng grapes)
Red wine: Irouleguy (Tannat, Cabernet-Franc grapes)
