This fermier cheese from Sancerre is a " great cousin " of crottin de Chavignol. Twice bigger than its cousin it has less notoriety but it will enhance your mouth. The Sancerre has a perfect balance of acidity and saltiness which is the characteristic of this region of France. The 3 different stage of affinage (fresh, ripe and dry) will reinforce its taste. You like soft goat cheese : eat it fresh. You like strong flavor : eat it dry.
