Made from pasteurized cow's milk, this pressed, uncooked cheese has an ivory-white paste, an attractive orange-brown rind and a curved shape that sets it apart from other cheeses of the same type.
This smoked cheese is called "Le Brézain", in reference to the ember and the origin of its inventor (Breizh: Brittany).
