Moliterno al Tartufo!
The basket is the traditional mold still used today! Moliterno is part of a category of Pecorino cheeses, mainly from southern Italy, called Canestrato, which means made in a basket.
Perfect for the holiday season, this cheese is aged for six months before the black truffle is added to the mix. When the cheesemaker deems the untruffled wheels delicious enough, they are sent north - to truffle country - to be pierced and filled with a rich truffle paste. The result is a breathtaking cheese that we suggest you pair with great, powerful Italian red wines.
