This small cheese - crottin - is produced in the south west of France.
This farm controls the entire production from the milk to the cheese. With a flock of 600 ewes this farm is the unique producer of this cheese.
Its pate is ivory white, and as its goat 's cousin you can have it fresh - half dry or dry.
Its flavor has a little acidity and a bit of nutty taste. but always subtle!
