Goutte du Limousin
This cheese comes from an area of France where the countryside is a mixture of forests and rolling hills forming a plateaux for the cattle to graze on. Amongst the young bushes of the forests the goats find their « bonheur » happiness. The foliage gives a milk that has a very interesting and rich composition. The taste develops a sensation of herbal characteristics, extremely pleasant. Excellent for spreading on a good well made country loaf. Once the cheese is made it is allowed to mature gently, and one finds traces of blue mould on the rind.
